Going from 165 Hz to 240 Hz is not, for most people.

Is one large screen better than three small ones?

It depends on what you value. Three screens wrap your peripheral vision and make apexes and mirrors visible without turning your head, which is why they remain popular. How far should the screen be from the wheel?

Close enough that the screen fills a useful part of your vision, which for a single monitor usually means closer than a desktop working distance. Set your in game field of view to match the physical geometry rather than to whatever looks widest, because a field of view that does not match the screen distorts your sense of speed and distance.

Is 4K worth it if my card cannot hold a high frame rate?

No. A high resolution screen running at an unstable frame rate is worse for driving than a lower resolution screen running smoothly, because inconsistent frame timing is what makes a car hard to place.
